INGREDIENTS

Sugar Free Skewers

  • 1 cup pineapple juice
  • 1 1/2 cup XyloSweet
  • 1/3 cup soy sauce
  • 8 chicken breasts
  • cherry tomatoes
  • other vegetables, as desired
  • 1 cup pineapple chunks

DIRECTIONS

Sugar Free Skewers

  • In a small sauce pan heat pineapple juice, XyloSweet, and soy sauce over medium heat. Remove from heat just before the mixture reaches a boil. Place chicken in a medium bowl and cover with the pineapple marinade. Refrigerate for 30 minutes.
  • Preheat grill to medium heat. Thread the chicken onto wooden skewers. Alternate pineapple, cherry tomatoes, and other vegetables between the pieces of chicken. Lightly oil grill. Grill the skewers 3 minutes per side (or until cooked thoroughly).
