Cooking with Xylitol

Sweeten Your Life the Xylitol WayThis xylitol recipe is courtesy of the revised and expanded xylitol cookbook "Sweeten Your Life the Xylitol Way,"by Karen Edwards, PhD. The recipe book is available through Xlear.com.

Carrot Spice Muffins

1 cup spelt flour or whole wheat pastry flour
½ cup quick-cooking oats, uncooked
1 tsp baking soda
2 tsp baking powder
½ tsp cinnamon
¼ tsp nutmeg
1/8 tsp ginger
1/8 tsp allspice
½ cup XyloSweet
1 egg
½ cup reduced-fat sour cream
2 TBSP extra virgin olive oil
1 TBSP unsweetened applesauce
½ tsp vanilla extract
1 ½ cups finely grated carrots
½ cup raisins

Combine flour, oats baking soda, baking powder, spices and xylitol in a large bowl. In another bowl, mix together remaining ingredients. Add liquid ingredients all at once to flour mixture, and stir just until flour is moistened. Coat inside of muffin cups with nonstick spray. Spoon batter into muffin pan and bake at 350 degrees for 18-20 minutes or until toothpick inserted in center comes out clean. Yield: 12 muffins

Per muffin: Calories: 114.1 Carbs: 18g Fiber: 1.8g Fat: 4.6g Sodium: 188.1mg Net Carbs: 9.2g

Three colorful SparX packages"I use SparX as a way to keep my mouth moist because I have severe dry mouth. After radiation treatment for throat cancer it left me with only my sublingual saliva gland. The SparX has also been instrumental in keeping my teeth intact. Dry mouth causes problems with tooth decay that I believe the SparX has help prevent. I have tried other xylitol mints that are supposed to be made for dry mouth but they have a bad aftertaste and feel grainy. The SparX dissolve very smoothly and do not have the grainy feel or the after taste of every other product I have tried.

"You need to market SparX for Dry mouth. It does a better job than any product now being sold for that purpose. All you need is a different name/label and put it in the dental section of drug stores.
