of our readers for their input, and helping to keep the newsletter
content timely and relevant. There are a lot of good things

Message from the CEO
Dear Crystal Xlear Readers:
The
time has come again for the year-end message from us at Xlear,
Inc. We would like to start this month’s message
with a big Thank You!
We started the company back in 2000 to get the word out on the
benefits of xylitol and its role in keeping people healthy. We
started with a simple message: Regularly rinse your nose with
xylitol (Xlear Nasal Wash) just like you regularly wash your
hands with soap, and you’ll get sick less, miss less work
or school, visit the doctor less, and need fewer rounds of antibiotics.
As most of you know, we have expanded on that message to include
the amazing dental benefits, as well as the general benefits
of using xylitol in daily life in place of other sweeteners.
We can report that the momentum we started back in 2000 has
continued to build. In 2007, we saw the addition of several hundred
new retail outlets, medical and dental offices, and even more
new retail customers. We also introduced Rain Dry Mouth Spray,
which is helping those that suffer from dry mouth symptoms because
of medication, or medical treatment or condition. Thank you for
all you do to spread the word on xylitol and its amazing benefits.
It is difficult for us to state the actual benefits of xylitol.
As many of you know, we are limited by what we can say about
the benefits of products because of FDA regulations. Other than
a generic “this is amazing stuff” we truly rely on
our customers to tell the world about how our products are helping
them. We greatly appreciate all that you do to help spread the
message of xylitol to your family, friends, customers, and patients.
You can expect many new and exciting products in 2008. We are
planning on introducing a new flavor of gum in the first quarter
of next year followed by a a pacifier that will slowly dispense
a xylitol gel -- that is also rich in calcium --, to those too
young to reap the benefits of xylitol gums. We are also working
on new mints, and a new brand of xylitol gum that delivers more
xylitol per chicklet and has a more powerful flavor. There is
even more, so keep your eyes and ears open (and watch for upcoming
editions of Crystal Xlear for information as the new products
come available).
Again, MANY THANKS for your support and input over the past
seven years. We sincerely appreciate all you do to educate others
on our products and how they can change their lives through healthier
living. May you all have a wonderful holiday season and a healthy

Cooking with Xylitol
This
xylitol recipe is courtesy of the revised and expanded xylitol
cookbook "Sweeten
Your Life the Xylitol Way,"by Karen Edwards, PhD. The recipe
book is available through Xlear.com.
Chocolate Pecan Bars
Crust:
1 ¼ cups spelt flour or whole wheat pastry flour
¼
cup plus 3 TBS xylitol
3/8 tsp salt
5 TBS unsalted butter
2 ½ TBS unsweetened applesauce
½
tsp maple flavoring
Filling:
1 cup plus 3 TBS xylitol
1 ½ cups dry milk powder
4 TBS unsalted butter
½
cup plus 2 TBS boiling water
1 egg
1 ½ tsp vanilla extract
½
tsp maple flavoring
1 tsp lecithin granules
½
cup unsweetened cocoa powder, sifted
1 ¾ cups chopped pecans
To make crust: Butter a 9”x13” baking dish, line
bottom and sides with parchment paper, and lightly butter parchment
paper. Mix flour, xylitol and salt together, and then cut in
butter until mixture resembles coarse crumbs. Stir in applesauce
and maple flavoring; mixture will be crumbly. Press firmly onto
bottom of prepared pan, and prick with fork halfway through
crust. Bake at 350 degrees for 15 minutes.
To make filling: Place xylitol, milk powder, butter and boiling
water in blender; process for several minutes or until mixture
is smooth. Add egg, vanilla extract, maple flavoring, lecithin
granules, and cocoa powder, and process again until smooth.
Transfer to a large bowl, and stir in chopped pecans. Pour into
baked crust, and bake at 350 degrees for 20-25 minutes or just
until filling is set. Allow to cool in pan before cutting into
bars.
Yields 48 bars.
Per Bar: Calories: 82.5, Carbs 9.9g, Fiber: 1g, Fat: 5.4g,
Sodium: 31.9mg, Net Carbs: 3.2g
